Sushi rice is short grain rice and is used to bind and support the small pieces of food. The higher amylopectin content results in stickier rice which makes it easier to hold the sushi together. Sushi rice is almost fat free and low in calories so makes an excellent addition to a low fat and low calorie diet.
rinse and simmer in 2 parts water to 1 part rice for approx. 20 minutes
