Green lentils are large, flat, lentils. They have a mild flavour with a meal-like texture. They make an excellent addition to a number of dishes but especially soups, casseroles, and vegetable bakes as they retain their shape after cooking. Like most lentils, green lentils are a good source of protein. They can so easily be added to the diet and are great for adding bulk to dishes, particularly salads and sides.
